Bonfire South Island Salmon on Cedar
Serves 6 | Bonfire BBQ Sauce
Ingredients
- 1 side South Island salmon, about 1.2 kg, pin-boned
- 1 untreated cedar grilling plank, soaked
- Salt and pepper
- 1 lemon, thinly sliced
- 3/4 cup (185 ml) Bonfire BBQ Sauce
- 2 spring onions, sliced
- Lemon wedges, to serve
Method
1. Heat a covered BBQ to medium. Place the soaked plank over direct heat until it begins to smoke lightly.
2. Season the salmon, place it skin-side down on the plank and top with lemon slices.
3. Close the lid and cook for 15 minutes. Brush generously with Bonfire BBQ Sauce and cook for another 8–12 minutes until just flaking.
4. Scatter with spring onions and serve from the plank with lemon wedges.
