West Coast Whitebait Pattie Some Things Are Best Left Alone
Serves 4 | No sauce
Ingredients
- 454 g (1 lb) fresh whitebait
- 1 egg
- Salt
- Lemon wedges
- Soft white bread and butter
Method
1. Gently rinse and drain the whitebait without bruising it.
2. Beat the single egg lightly, fold through one pound of whitebait and season with salt. Nothing else.
3. Melt a little butter in a heavy pan. Spoon in broad patties and cook briefly on each side until just set and lightly golden.
4. Serve immediately with lemon, white bread and butter. Our sauces are great with all wild food - except whitebait. SOME THINGS ARE BEST LEFT ALONE. No sauce.
