Wild Boar San Choy Bow
Serves 4
Ingredients
- 750 g minced wild boar
- 80 ml Glasseye Creek Smoked Chilli Sauce
- 2 baby cos lettuces, leaves separated
- 25 g fresh ginger, grated
- 1 x 225 g can water chestnuts, drained and chopped
- 4 spring onions, sliced
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 3 garlic cloves, crushed
- 2 tbsp light soy sauce
- 1/2 cup coriander leaves
Method
1. Separate, wash and thoroughly dry the lettuce leaves; keep chilled so they stay crisp.
2. Heat a wok until smoking. Add the oil and minced meat and stir-fry for 5-6 minutes, breaking it into small pieces, until browned and cooked through.
3. Add ginger, garlic, water chestnuts and the white parts of the spring onions; stir-fry for 2 minutes. Add the sauce and soy, tossing until glossy and nearly dry.
4. Spoon the hot mixture into the cold lettuce cups. Finish with coriander and the green spring-onion tops and serve immediately.
