Pipis with Wild Meat Bacon Broth
Serves 4
Ingredients
- 1.5 kg pipis, scrubbed and debearded as needed
- 80 ml Glasseye Creek Wild Meat Sauce
- 150 g streaky bacon, diced
- 3 garlic cloves, crushed
- 1 x 400 g can crushed tomatoes
- 8 thick slices sourdough
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
Method
1. Soak and rinse the shellfish as appropriate, discarding any cracked shells or any that do not close when tapped.
2. Cook bacon in a heavy camp pot until crisp. Add garlic and tomato and cook for 2 minutes, then stir in the sauce.
3. Add shellfish and 150 ml water, cover tightly and cook over hot coals for 4-6 minutes, shaking once, until opened.
4. Discard any shells that remain closed. Finish with parsley and serve immediately with sourdough.
