Hare Saddle with Wild Meat Red Wine Jus
Serves 4
Ingredients
- 800 g boned hare saddle
- 2 tbsp olive oil
- 1 shallot, diced
- 200 ml red wine
- 300 ml game or beef stock
- 3 tbsp Glasseye Creek Wild Meat Sauce
- 50 g cold butter
- 300 g mushrooms
- 800 g potatoes, mashed
Method
1. Heat the oven to 190°C. Season and sear the hare saddle in oil for 2 minutes per side, then roast for 6-10 minutes depending on thickness. Rest 10 minutes.
2. Cook mushrooms in the same pan and set aside. Add shallot, then wine; scrape the pan and reduce by two-thirds.
3. Add stock and sauce and reduce until lightly syrupy. Remove from heat and whisk in cold butter; do not boil again.
4. Slice hare and serve with mash, mushrooms and jus.
